- 1 1/2 cups spelt flour (wholemeal)
- 337.5 grams plain flour (cups)
- 3 tsp. baking powder
- 1 cup baking powder (Natvia)
- 2 lemons
- 4 eggs
- 1/2 cup butter (just melted)
- 1 1/2 cups Greek yoghurt
- 1/2 cup lemon juice
- icing
- 250 grams mascarpone
- 3/4 cup Greek yoghurt (reduced fat)
- 1/4 cup icing mix (Natvia)

Directions
- Preheat oven to 180°C/ 356°F and spray two sandwich tin pans with oil.
- Sift flours and baking powder into a large bowl and stir through Natvia and lemon zest.
- Whisk together eggs, butter, yoghurt and lemon juice until well combined.
