  • 1 cup butter (softened, chopped)
  • 1 1/3 cups granulated sugar (plus extra, for sprinkling)
  • 1 lemon (zested and juiced)
  • 4 eggs
  • 2 cups self rising flour (sifted)

    Directions

    1. Preheat oven to 350°F. Lightly grease and line 8 mini loaf pans.
    2. Cream butter and sugar until light and fluffy. Beat in lemon zest. Add eggs, 1 at a time, beating well after each addition. Fold in flour and lemon juice. Distribute between loaf pans and sprinkle with extra sugar. Bake for 20-25 mins, until a skewer inserted in the center comes out clean. Let cool in pan for 5 mins then turn out onto a wire rack to cool completely.
