Macaroni and Cheese with Ham

  • 8 3/4 ounces macaroni
  • 5 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • 2/3 pound frozen mixed vegetables
  • 4 ounces cheddar cheese (grated)
  • 2 ounces Parmesan cheese (grated)
  • 2 tablespoons fresh flat leaf parsley (chopped)
  • 3 1/2 ounces ham (sliced, to serve)

    Directions

    1. Cook pasta in boiling salted water for 10-12 mins, or until al dente. Drain then return to pan.
    2. Meanwhile, melt butter over medium heat. Add flour and cook until light golden brown. Gradually whisk in milk until smooth. Cook, stirring, for 3-4 mins, or until thick and bubbly. Reduce heat, add vegetables and simmer for 2-3 mins, or until vegetables are tender. Remove from heat, add cheese and parsley. Season. Toss with pasta then transfer to serving dishes and top with ham.
