- 1 block medium firm tofu (or of soft, about 1 pound, cut into 1-inch cubes)
- 4 leeks (baby, white and light green parts, or scallions, sliced thinly on a bias)
- 1/4 cup peanut oil
- 6 oz. ground beef (pork, or lamb, optional — I like the strong flavor of lamb)
- 2 1/2 Tbsp. chile bean paste (Szechuan)
- 1 Tbsp. fermented black beans (rinsed under cold water, and roughly chopped)
- 2 tsp. Szechuan peppercorns (ground)
- 1 cup chicken stock
- 1 tsp. sugar
- 1 tsp. soy sauce
- 1 Tbsp. cornstarch
- 1 1/2 Tbsp. cold water
- Szechuan peppercorns (ground roasted, for finishing the dish)
- scallions (thinly sliced on a bias, for garnish, optional)
