- 1 sweet potato (large, cut into 1/2” cubes)
- 1 purple potato (large, cut into 1/2″ cubes)

- 1 handful flat leaf parsley (loosely chopped leaves)

- 1/4 red onion (a medium, thinly sliced)
- 4 Tbsp. apple cider vinegar
- lemon juiced
- zest
- 2 Tbsp. maple syrup
- 1 Tbsp. extra-virgin olive oil
- 2 Tbsp. unsweetened applesauce
- 1 tsp. pomegranate molasses
- 1 pinch allspice
- 1/2 tsp. canela
- 1 pinch salt (and pepper)
