  • 2 tablespoons soy sauce (or tamari)
  • 2 tablespoons lemon juice
  • 2 tablespoons agave syrup
  • 1 tablespoon tomato paste
  • 2 teaspoons vegetable oil (omit for oil free)
  • 1 1/2 teaspoons ginger (fresh grated)
  • 2 garlic cloves (minced)
  • 1 1/2 teaspoons garam masala
  • 1/4 teaspoon black pepper
  • 1 pound extra firm tofu (drained, patted dry and cut into ½ inch cubes)
  • 1/4 cup cilantro leaves (fresh)
  • 1 cup basmati rice
  • 1 3/4 cups water
  • 1 1/2 teaspoons black mustard seeds (optional, but really nice)
  • 1 tablespoon vegetable oil (omit for oil free)
  • 1/4 teaspoon turmeric
  • salt (to taste)
  • 2 cups fresh spinach leaves (lightly packed)

  • 2 scallions (chopped)

    Directions

    1. Make the Masala Baked Indian Tofu
    2. Preheat oven to 400° and line a baking sheet with parchment paper.
    3. Stir soy sauce or tamari, lemon juice, agave or maple syrup, tomato paste, oil, fresh ginger, garlic, garam masala and pepper together in a medium bowl. Add tofu cubes and gently toss to coat.
