- 2 Tbsp. soy sauce (or tamari)
- 2 Tbsp. lemon juice
- 2 Tbsp. agave syrup
- 1 Tbsp. tomato paste
- 2 tsp. vegetable oil (omit for oil free)
- 1 1/2 tsp. ginger (fresh grated)
- 2 garlic cloves (minced)
- 1 1/2 tsp. garam masala
- 1/4 tsp. black pepper
- 1 lb. extra firm tofu (drained, patted dry and cut into ½ inch cubes)
- 1/4 cup cilantro leaves (fresh)
- 1 cup basmati rice
- 1 3/4 cups water
- 1 1/2 tsp. black mustard seeds (optional, but really nice)
- 1 Tbsp. vegetable oil (omit for oil free)
- 1/4 tsp. turmeric
- salt (to taste)
- 2 cups fresh spinach leaves (lightly packed)
- 1/4 cup roasted cashews
- 2 scallions (chopped)

Directions
- Make the Masala Baked Indian Tofu
- Preheat oven to 400° and line a baking sheet with parchment paper.
- Stir soy sauce or tamari, lemon juice, agave or maple syrup, tomato paste, oil, fresh ginger, garlic, garam masala and pepper together in a medium bowl. Add tofu cubes and gently toss to coat.
