Lychee and Mint Mojito

  • 2 lychees (peeled and deseeded)
  • 1/2 lime (cut into wedges)
  • 8 sprigs fresh mint (plus extra, to decorate)
  • 3 tablespoons white rum
  • 1 tablespoon liqueur (lychee)
  • 1/4 cup pineapple juice (fresh)
  • 1 tablespoon simple syrup
  • ice cubes

    Directions

    1. Muddle the lychees, lime and mint in a cocktail shaker.
    2. Add the rum, lychee liqueur, pineapple juice, simple syrup and ice cubes and shake to combine.
    3. Serve in a tall glass, decorated with a sprig of mint.
