This recipe for tzatziki is flavored with garlic shoots and English mustard for a contemporary twist on the classic Greek dip.

- 1 cucumber (unpeeled)
- 1/2 cucumber (sliced)
- salt
- 1 natural yogurt
- English mustard (ground, to taste)
- 1/2 Tbsp. apple cider vinegar
- garlic shoots (to taste)
- 1 Tbsp. olive oil

Directions
- Grate unpeeled cucumber into a glass dish, and cut remaining cucumber into slices, and sprinkle with a pinch of salt for 15 minutes to extract the water from cucumber.
- Then, add the yogurt, and re-season with salt if necessary
- Add a pinch of ground English mustard, and apple cider vinegar.
- Cover with garlic sprouts, and a drizzle of olive oil.
- Refrigerate until serving.
