- 1 1/2 cups apple (approximately 2 apples peeled, cored and chopped, I used Granny Smiths)
- 1 cup pitted dates (chopped)
- 1 tsp. bicarbonate of soda
- 1 cup boiling water
- 2 eggs
- 1 cup caster sugar
- 1/2 cup oil (a vegetable or lightly flavoured oil is best, olive oils can be quite strong)
- 1 tsp. vanilla extract (or vanilla bean paste)
- 1/2 tsp. salt
- 1 1/2 cups all purpose flour (plain)
- 1 1/2 tsp. baking powder
- 70 grams butter
- 4 Tbsp. cream
- 1/3 cup brown sugar
- 1/3 cup maple syrup
- 1 tsp. vanilla extract (or vanilla bean paste)
- 1 1/2 cups shredded coconut (or moist coconut flakes)

Absolutely magnificent! Just be aware that the recipe instructions forgot to add the vanilla essence to the cake and that when making the topping it would be better to heat the butter/maple syrup mixture until it thickens. I just melted and added the coconut straight away. It took a bit more cooking but still turned out brilliantly. I will definitely make this again.

This cake was amazing--wonderfully moist and richly flavoured. I used treacle instead of brown sugar because I had it on hand and it gave a wonderful depth of flavour to the cake and topping. I also heated some treacle to serve over the top with ice-cream. Yum!
