- 4 tsp. olive oil
- 4 chicken sausages (reduced-fat, 12 oz. total, sliced about 3/8 inch thick, I used Sabatinos Chicken Sausage with Mozzarella, Artichokes and Garlic.)
- 1 onion (large, chopped)
- 1 Tbsp. garlic (finely minced fresh)
- 1 tsp. dried thyme
- 1/2 tsp. dried oregano
- 16 oz. black eyed peas (frozen, or use dried black-eyed peas, which will take longer to cook)
- 6 cups chicken stock (or broth, I used my homemade chicken stock.)
- 1 cup water (and more as needed)
- 1 red bell pepper (seeds removed and finely diced)
- 1 green bell pepper (seeds removed and finely diced)
- salt
- fresh ground black pepper
- 2 Tbsp. sherry vinegar (or any mild vinegar)
- sherry vinegar (optional)
- olive oil (optional)
