- 2 lb. Yukon Gold potatoes (you'll need about 6 cups chopped 1/2 inch fry wedges)
- 2 red bell pepper (small or 1 large, chopped, 184g, you will need 1 3/4 cups chopped)
- 1 cup white onion (finely diced)
- 1/2 Tbsp. chili powder (+ 2 more teaspoons towards the end of cooking, see directions)
- 1/2 Tbsp. garlic powder
- 1/4 tsp. smoked paprika (optional)
- 1 tsp. fine sea salt
- 1 cup water
- 2 Tbsp. nutritional yeast
- 15 oz. red kidney beans (low-sodium, or 1 1/2 cups 255g cooked)
- 1/2 cup chili (the above cooked, mixture)
- 1/4 cup nutritional yeast
- 1/2 Tbsp. lemon juice
- 1/4 cup water
- 2 Tbsp. cashew butter (optional for a thicker/creamier sauce)
