- 1 1/4 lb. boneless, skinless chicken thighs
- 2 cups lacinato kale (shredded, or romaine lettuce, if using kale, remove stems before shredding)
- 2 cups red cabbage (shredded)
- 1/2 cup grated carrots (or carrot matchsticks)
- 3 mandarin oranges (fresh, like Halos, peeled and segmented)
- 1/4 cup onion tops (chopped green, green parts only)
