- 1 1/2 cups baking mix (Bob's Red Mill Low Carb, you can use all-purpose flour, too)
- 1 1/2 tsp. baking soda
- 1/2 tsp. kosher salt (or sea)
- 2/3 cup zucchini (grated, squeeze excess liquid out with your hands or paper toweling)
- 1 banana (medium sized ripe, mashed)
- 1/4 cup molasses (any kind)
- 1/4 cup full fat sour cream (or low fat, I don't recommend using fat free)
- 1 large egg
- 1 tsp. vanilla extract
