- 4 cups rotisserie chicken (chopped or shredded, or cook 3-4 chicken breasts and cut up the meat)
- 1 red bell pepper (large, chopped)
- 2 avocado (chopped)
- 2 Tbsp. lime juice (fresh-squeezed, to toss with the avocado, I used my fresh-frozen lime juice)
- 1/2 cup green onions (sliced)
- 1 cup chopped cilantro (or use a bit more green onion if you're not a cilantro fan)
- 4 Tbsp. mayonnaise
- 1 1/2 Tbsp. lime juice (fresh-squeezed, I used my fresh-frozen lime juice)
- 1/2 tsp. salt (or Vege-Sal, more or less to taste)

Made this for brunch with friends and we all loved it! I did add about a teaspoon of sugar to the dressing as I found it a little too sour. Will definitely make it again!
