- 2 Tbsp. clarified butter (unsalted, Ghee, or grape seed oil, divided in half)
- 1 yellow onion (large, diced)
- 12 oz. mixed mushrooms (sliced)
- 2 cloves garlic (minced)
- 1 cup dry red wine
- 1 Tbsp. reduced sodium soy sauce (optional)
- 1 Tbsp. fresh rosemary (minced)
- 1 Tbsp. pomegranate balsamic vinegar (I bought mine here, but traditional balsamic vinegar can also be used)

- fresh parsley (finely chopped, for garnish, optional)
