- 2 tsp. olive oil (for brushing squash)
- 2 tsp. herbs (Italian, Blend, for sprinkling on squash before roasting)
- 2 tsp. olive oil
- 5 turkey sausage links (italian links, 19.5 oz. hot)
- 3 cups marinara sauce (Use a 24 oz. jar or homemade marinara sauce; look for the sauce with the least sugar if you use sauce from a jar.)
- 1 tsp. dried basil
- 1 tsp. herbs (Italian, Blend)
- 1 tsp. garlic powder (or use minced fresh garlic if you prefer)
- 2 cups low-fat cottage cheese (regular or low-fat)
- 2 eggs
- 1 tsp. herbs (Italian, Blend)
- 2 cups low-fat mozzarella cheese (grated, regular or low-fat)
- 1/2 cup grated Parmesan cheese (coarsely, plus more to add at the table if desired.)

This recipe is a keeper. I've made it several times, and my partner and I love it. Leftovers refrigerate and reheat well.

This was AMAZING!!! You have to destroy your entire kitchen to make it but it was totally worth it. New favorite!!

It was AMAZING!!! Only thing I changed was adding tomato paste before adding the marinara sauce.

O.M.G! I was SO surprised by how delicious this was!! We had my 11 year old's BFF (a fairly finicky eater) over and also a friend who LOVES her carbs and 4 out of 6 of us LOVED it so much we had seconds, My 5 year old and the finicky 11 year didn't have seconds, but ate what was on their plates. I'm sure that the variety of sauce and italian sausage used would affect the flavor, I used Jennie-O's turkey sausage (didn't have time to get to meat counter at one of my fave stores) and Cusina Antica's Tomato basil sauce. I also used some parmesan I got from Costco a while back that we grated fresh and mixed it in to the cheese mixture (an accident, but it turned out GREAT!). Next time, I'll probably do half cottage cheese and half ricotta since the large curds are a little odd to me, but honestly, I have zero complaints on this one and hubby, myself and my 11 year old can't wait until I make it, again!!
