i mixed this recipe early in the morning and had my husband put it on to cook a little later in the day as i didn't want it sitting in the crock a lot of extra time so that may have contributed to the issue. Everything looked and smelled so good before and during cooking that i was surprised that the end result was so watery and lacking flavor. in going to try again without the tomatoes and at a time when i can prep and cook immediately to see if that helps.

I made this in my Instant Pot and it was tasty. I had to add a little cornstarch to thicken the sauce, but other than that, it was easy and quite delicious. Serve with Saffron Rice and you're done.
