Easy, peasy, gluten-freezy. Delicious, not too naughty, and forgiving to adaptation. I tried this with broccoli and stems, swiss chard, olive oil instead of butter, yogurt instead of cream, fresh basil, and parmesan-mozzarella blend. Still as delicious as when I made it following the recipe. Thanks.

This was delicious. I used soya cream instead of regular, and topped it with Parmesan cheese. It was a very satisfying and comforting side dish. Will definitely be making again.

excellent as a side dish for keto diet! it's creamy, feels a bit like mash potatoes and it's super nutritious

This dish turned out to be one of the favorites at our cookout this weekend. I added salt to the boil, the cauliflower alone after the boil was very flavorful. I opted to bake the casserole after sautéing the spinach and onions for about 20 minutes at 350 uncovered until the mozzarella began to brown. My wife is a vegetarian and This dish was perfect for her. I will definitely be keeping this recipe as one of my favorite sides.

This needed flavor! After the cauliflower was done and drained, I used my hand blender right in the pot to blend in the butter and cream, then stirred in salt and pepper.
While sautéing the onion, I chopped 3 cloves garlic and sautéed them with the onion, seasoning all with salt and pepper.
If you use a cast iron pan, or equivalent for the onion,,garlic, and spinach,you can put it in the broiler as soon as the cauliflower puree is added to the spinach, and cheese is on top...no extra baking dish.
I also used shredded mozzarella, some Parmesan, and shredded Swiss...one cup total.
Great idea for a low carb dish, original recipe just too bland.

I don't have a food processor and didn't realize I needed one until I began making. I ordered a food processor and will try the recipe again.

Its just too easy and too tasty I would certainly do it again and again its wonderful for a light brunch !
