Low-Carb Cauliflower Cream Cheese Soup is a low-carb, gluten-free version of Panera's now-retired Potato Cream Cheese Soup. Ready in just 30 minutes!

- 1 small shallot (or 1/4 small onion, chopped)
- 3 cloves garlic (minced)
- 4 cups grated cauliflower (about 1 small head of cauliflower)
- 1 Tbsp. chopped fresh dill
- 3/4 tsp. seasoned salt (I used Lawry's)
- pepper
- 2 Tbsp. water
- 2 Tbsp. gluten (free or all-purpose flour, see notes for brand used)
- 1 3/4 cups chicken broth (divided)
- 2 cups milk (any kind, I used skim)
- 8 oz. Greek yogurt (/cream cheese blend or 1/3 less fat cream cheese, softened to room temperature)
