- 1 onion (large, diced small)
- 3 tsp. olive oil
- 1 Tbsp. minced garlic
- 1 Tbsp. Creole seasoning (Tony Chachere's, or other Creole seasoning of your choice)
- 1 tsp. dried thyme
- 1 tsp. dried oregano
- black pepper
- salt
- 4 cups small red beans (cooked, or use 3 cans red beans, rinsed and drained and add 1/2 cup more chicken stock)
- 3 cups ham (diced lean, or Louisiana Hot Sausages, dice into pieces about the size of the cooked beans)
- 3 cups homemade chicken stock (or canned chicken broth)
- 1 Tbsp. worcestershire sauce
- 1 tsp. Tabasco Green Pepper Sauce (or use a smaller amount of red Tobasco)
- 3 bay leaves
- 1 tsp. red wine vinegar
- 3 cups cooked white rice (for serving, Use Uncle Bean's Converted Rice for South Beach Diet.)

The family loved it! I substituted the sausage for plant based, Red Hot hot sauce instead of Tobasco and red wine vinegar, a bit of tomatoe juice and veggie broth instead of chicken. I will definitely be making this again.

So tasty! We always have a box of Zatarain’s on the shelf because we love it so much. This is more work but definitely better. It’s also a great way to use up leftover ham.

Amazing! Very flavorful. I excluded a few ingredients (red wine, green Tabasco,etc) bc I did not have them and it still turned out great!

I made this to recipe except use dried little red beans soaked overnight. Added a bit more liquid and it was delicious!

great. I didn't have all the ingredients. I used ol bay seasoning instead of Tony's. turned out great.

I cooked it on the stovetop and it was delicious. Made for a quick and yummy Easter dinner.

I prepared this recipe before and served it at a potluck where it was a hit. i recommend using no salt and 1/2 tbls. of the creole seasoning.

I added a can of fire roasted diced tomatoes and put over yellow rice....used ham and smoked sausage...really good.

Tried it with ham ... Not sure why ... I'm a born and raised Louisiana country girl and this recipe isn't like what I am use to. Not bad, just lacking in the authentic flavor of the south. But if you don't know the difference, it shouldn't matter.

I love this recipe. I've done both lean ham and the Cajun sausages but the kids eat the ham better

I simmered on stovetop instead so I could control the thickness. I followed all the steps and Ingredients up until putting in crockpot.
Smashed some beans at every stir to increase thickness. I used andouille, quartered. Love the way it turned out, and the heat is really nice. Really salty though... not sure if it's the creole seasoning or the reduction of the sauce, but wow! Gonna reduce the creole next time a bit, probably half.

Great recipe! I use the canned dark red beans, low sodium with smoked ham diced into smaller than bite sized pieces and sauteed chicken andouille sausage on the side.
