- 1 pkg. shrimp & crab boil seasoning (Zatarain's Crawfish, packets)
- 8 oz. shrimp (Zatarain's Concentrated, & Crab liquid boil)
- 1 cup salt (basic iodized salt, nothing fancy)
- 1/4 cup cayenne pepper (plus more for heat)
- 1 1/2 yellow onions (halved, outer skin removed)
- 2 lemons (halved)
- 1/2 fresh pineapple (rind removed and left whole)
- 4 heads garlic (whole)
- 2 lb. yellow potatoes (or small red, not bite-size)
- 8 oz. crimini mushrooms (or button, whole)
- 1 lb. carrots (full-size, cut in half)
- 6 oz. black olives (canned, do not drain)
- 20 lb. crawfish (about 3-4 pounds per person)
- 2 lb. andouille sausage (or smoked sausage cut into 2-3 inch pieces)
- 3 ears corn husks (removed and broken in half)
- 1 head leaves (cauliflower, removed)
- 1 lb. green beans (trimmed)
