Made this minus raisins & all spice. Plus cardamon. Made crumble that was in comments (excellent). I reduced sugar to 1/2 cup but still really sweet. Next I will reduce it down to 1/3 cup to see if that's enough. If it's not I will just serve it warmed with vanilla ice cream or whipped cream to add sugar then adjust next batch. Very good but extremely time/labor intense with processing the loquats. I have a tree but I would never buy them & take the time to make it.
