- 1 bunch scallions (trimmed, both white and green parts thinly sliced crosswise; set aside 2 tablespoons of the green parts for serving)
- 1 piece ginger (3 inches, peeled and minced)
- 2 cloves garlic (peeled and minced)
- 2 lb. ground beef
- 4 Tbsp. soy sauce (or more to taste)
- 4 Tbsp. hoisin sauce
- 3 Tbsp. dark sesame oil (Asian)
- 1/2 tsp. freshly ground black pepper
- 4 cups cooked rice (warm, page 488)
- 1/2 tsp. hot red pepper flakes
- 1/2 cup mirin (sweet rice wine or sake)
- 1 1/2 cups beef stock (or chicken, preferably homemade, page 549)
- 1 Tbsp. brown sugar (or granulated sugar, or more to taste)
- 1 tsp. cornstarch
- 1 Tbsp. hot water (dissolved in, stir to form a paste)
- 2 Tbsp. butter (¼ stick)
- 4 large eggs
- 4 mangoes (ripe, peeled and cored and diced)
- 1 hothouse cucumber (seeded and diced, I left the skin for that bright green pop of color)
- 1 garlic clove (smashed)
- salt
- pepper (to taste)
- 1/4 cup chopped cilantro
- 4 limes (2-, juice of, to taste)
