- 1 bell pepper (cut into strips, we used 1/2 red and 1/2 yellow)
- 1/2 lb. asparagus (tough ends snapped off and discarded, spears cut into 1 1/2-inch pieces)
- 2 medium potatoes (diced into medium-sized pieces)
- 14 oz. diced tomatoes
- 1/2 tsp. smoked paprika
- 1/2 Tbsp. ground turmeric
- 1/4 Tbsp. cayenne pepper (optional, omit if you don’t like spicy)
- 1/2 tsp. saffron threads (crumbled, optional*)
- 1/4 tsp. freshly ground black pepper (adjust to taste)
- 1 1/2 cups paella rice (short grain white rice)
- 3 cups low sodium vegetable broth
- 1/2 cup flat leaf parsley (chopped)
- 3 bay leaves
- 1/2 cup artichoke hearts
- 1 cup green olives (pitted and sliced)
- 1/2 cup green peas (fresh or frozen, thawed)
