Holy moly......this is so good it's ridiculous. A little time consuming (I would probably try roasting the shiitake and tofu at the same time next time, maybe?) but absolutely worth the effort. I used brown rice soba noodles instead of udon (personal preference) and chicken broth instead of veg (already had it on hand). Found kholrabi at the farmer's market, which was awesome! I opted to leave out the nori simply because I don't care for it. The roasted tofu....AMAZING. Good gracious, I could eat that by itself everyday. I did add a little extra broth and a hearty scoop of miso but followed everything else exactly. UNBELIEVABLE DELICIOUS! Thank you so much for sharing, I'm so happy I found this recipe!
