- 3 cups sweet potatoes (roasted, cooked in olive oil, sea salt, and pepper)

- 6 hard boiled eggs (large)
- 14.5 oz. extra firm tofu (diced and air fried)
- 1 cup chopped walnuts
- 1 Tbsp. canela
- 3 Tbsp. maple syrup
- 1/4 tsp. sea salt
- 1 Tbsp. coconut oil
- 1 tangerine (medium)
- 3/4 cup extra virgin olive oil
- 1/4 cup red wine vinegar
