- 1 ham hock (or ham bone, I used a ham bone with lots of meat left on it)
- 2 Tbsp. butter
- 2 potatoes (peeled and diced, if desired)
- 12 cups chicken stock (or 12 cups vegetable stock)
- 1 bay leaf
- 2 tsp. worcestershire sauce (or 2 teaspoons Maggi seasoning)
- 1/2 tsp. garlic
- 1/4 tsp. ground nutmeg (fresh, I used McCormick's)
- 1/2 tsp. celery salt
- 1/2 tsp. ground black pepper (course-)
- 1 cup finely chopped onion
- 2 Tbsp. vegetable oil (or 2 tablespoons bacon fat)
- 2 Tbsp. flour
- 3 cups smoked sausage (sliced, or polish sausage)
