  • 14 ounces linguine
  • 1 tablespoon olive oil
  • 1 onion (peeled and chopped)
  • 1 clove garlic (peeled and finely chopped)
  • 3 tomatoes (diced)
  • 2 red bell peppers (large, deseeded and cut into rings)
  • 1 cup peppers (roasted, finely diced)
  • 14 1/2 ounces diced tomatoes
  • 1 tablespoon vegetable broth (instant)
  • 1/2 cup black olives
  • 2 cans canned tuna (drained, 5 oz cans)
  • 1/3 cup grated Parmesan cheese
  • 1 tablespoon chopped parsley

    Directions

    1. Cook the pasta in a large pan of boiling salted water for 10 mins.
    2. Meanwhile, heat the oil in a pan, add the onion and garlic, sauté for a couple of mins then add the tomato, both types of peppers, and canned tomatoes along with the broth (or 1 tablespoon of pasta water) and the olives. Bring to a boil and simmer 5 mins.
    3. Flake the tuna into large chunks and add to the tomato sauce then season to taste with salt, pepper and sugar.
    4. Drain the pasta and serve it on warm plates. Spoon the sauce over and sprinkle with Parmesan and parsley.
