Very nice recipe. I don’t usually like sweet potatoes because they are too sweet for my taste. However this was a nice savory recipe. I used parsley instead of cilantro because I always have parsley on hand.

I made this once and ever since then, I’m the queen of sweet potatoes at our family and friends gatherings. No more sugary sweet mashed blobs of orange. Delicious, fresh and healthy!

I liked it made it for the Fourth of July instead of potato salad it lived up sweet potato in a new way
