- 1 avocado (medium ripe, diced into bite-sized pieces)
- 1 jalapeno pepper (medium, sliced into thin rounds)
- 1 chile pepper (small serrano, finely minced, remove seeds for less heat; optional)
- 1/2 cucumber (medium, diced into bite-sized pieces)
- 1/3 cup fresh cilantro (finely minced, or to taste)
- 3 Tbsp. olive oil
- 1 lb. shrimp (cleaned and deveined, I used 12-15 count large shrimp)
- 2 tsp. cumin (or to taste)
- 1 tsp. kosher salt (or to taste)
- 1 tsp. freshly ground black pepper (or to taste)
- 1/3 cup lime juice (freshly squeezed)
- 4 Tbsp. honey (or to taste)
