We liked this dish a lot. Used fresh squeezed oranges and substituted coconut flour for cornstarch in the dredging mixture. Coconut flour has a grainy texture but we didn't mind. Didn't have the marmalade and can see where it would add to the flavor but figured it was sweet enough without. Microwaved some fresh carrots for 2 minutes then added frozen peas and did another 45 seconds. Added to the chicken using a slotted spoon but feel that the tasty orange sauce was diluted from the moist veggies. Next time I'll use a steamer. Served over chuka soba Thanks for a tasty recipe.
