Eggs Benedict is all about the Hollandaise sauce for me! I had to try this version because I did not want a stick of butter for dinner considering I had one in last nights Alfredo sauce!!
I thought the mock-Hollandaise was a very good substitute. The only change I made was reducing the lemon juice to three tsp in lieu of four. Actually, I did make another itty-bitty change ...... I really wanted the deep yolk-yellow colour, so three drops of yellow food colouring did the trick! Lol.
