Everyone liked the dish. Because of a slightly larger crowd, I used 12oz of penne, and 2oz each of shredded sharp cheddar and shredded monterey jack/colby jack cheeses. I even screwed up and used a 1/2 tsp of black pepper instead of an 1/8th, and got complements on the "slight" pepper taste. Huh. I also cut the cream (half-n-half) to 1 cup to make the dish slightly "drier" , to make it easier to dish. Just have to watch (and stir) the cream base a bit more before adding the cheeses.
Definitely on my rotation for gathering dishes!

Great! My kids are obsessed with this recipe. Creamy and delicious sharp cheddar and a little less mustard is how they like it
