- 115 grams soft brown sugar (dark)
- 2 eggs
- 1 Tbsp. milk (plus extra if necessary)
- 1 Tbsp. black treacle
- 150 grams self raising flour
- 1 tsp. baking powder
- 1 tsp. ground ginger
- 6 pieces syrup (stem ginger, drain the, off and chop finely – I did it in the food processor)
- 80 grams unsalted butter (at room temperature)
- 1 tsp. ground cinnamon
- 160 grams icing sugar
- 1 Tbsp. hot water
