I thoroughly enjoyed this recipe. I added blueberries to my mix, and it turned out great. I also included a little bit of lemon zest and made lemon icing with white powdered sugar and some lemon juice.

I love it. But it has the consistency of a banana bread pudding which in and of itself is yummy. This is not gummy at all it’s very moist and light but it has the consistency of bread pudding. The only thing I deviated was I did half the sugar. Using only one egg instead of the two would probably make it more like a banana bread.

I made this recipe twice using 1-2 bananas because that's all I had. It was delicious. A family favorite.
