- 1/2 red onion (cut in half, then sliced)

- 8 oz. red kidney beans ((240gr) drained, rinsed)
- 8 oz. white beans ((240gr) cannellini, drained, rinsed or all one color)
- 1/2 cup Greek olives ((2oz, 60gr) dry-cured)
- 2 oz. feta (crumbled)
- 2 Tbsp. fresh oregano leaves ( or basil)

- 1 Tbsp. red wine vinegar

- 1 clove garlic
- 1 1/2 Tbsp. white balsamic vinegar
- 2 tsp. Dijon mustard
