Let’s Make D23’s Spinach & Ricotta Mickey Pinwheels

Directions

1. 1. Thaw the puff pastry sheets as instructed on the package. Peel and mince the garlic and roughly chop the spinach.
2. 2. In a pan, heat the olive oil over medium heat. Add the garlic and cook until fragrant (about 30 seconds). Add spinach and stir together. Cover and cook for 2-3 minutes, stirring occasionally, until spinach is wilted. Remove lid and cook for an additional 2-3 minutes, allowing any excess water to evaporate. Once the excess water has evaporated, remove from heat.
3. 3. In a large bowl, mix the ricotta, parmesan, and spinach. Add salt and pepper to taste.
