- 2 bay leaves
- 3 Tbsp. bacon fat (or olive oil, divided)
- 4 sausages (made with herbs and/or garlic)
- 1 white onion (or large yellow)
- 4 cloves garlic
- 1/2 cup red wine (sturdy)
- 3 stalks celery (and their leaves if possible)
- 1 Tbsp. marjoram (dried, or an equivalent amount of fresh)
- 5 carrots (depending on their size)
- 4 cups chicken stock (preferably homemade)
- 3 Tbsp. ketchup (organic)
- 2 cups spinach (chopped, frozen is fine, if you don't have fresh; just use 1 1/2 cups instead)
- 1/4 cup chopped parsley
- salt
- pepper
- red wine vinegar (to taste)

This recipe is good. It used a bit of balsamic at the end to liven it up. I should have stuck to the directions bit more closely (I'm a serial ignorer of instructions). My soup would have benefited from removing some of the sausage fat before adding the vegetables to the pot. It's not a big deal, but I will pour that off next time. I should have used my judgement on that. This soup will be made again in our household.
