- 100 grams green lentils (dried French-style, or 200g ready-cooked)
- 1 garlic (fat clove, unpeeled, roughly halved lengthwise)
- 1/2 tsp. dried thyme (or rosemary)
- 1 1/2 Tbsp. olive oil (ordinary)
- 250 mL cold water
- 240 grams chickpeas (cooked, drained, from a can or carton, my can was around 400g undrained)
- flaky sea salt
- finely ground salt
- 1 red onion (small, or 2 small shallots, peeled and sliced thinly into half moons)
- 1/2 lime (or lemon, totally up to you)
- 1 tsp. flaky sea salt
- 1 tsp. coriander seeds (toasted and ground)
- 1/2 tsp. cumin seeds (toasted and ground)
- 1 Tbsp. garlic oil
- fresh coriander (Small handful finely chopped, or parsley, your pick)
- 2 tsp. garlic oil (or to taste)
- lime juice (More, to taste)
- flaky sea salt
- 2 Tbsp. toasted pine nuts (or sesame seeds or any nut you like)
