- 1 Tbsp. olive oil
- 1 brown onion (large, chopped)
- 3 cloves garlic (crushed)
- 1 inch fresh ginger (chopped finely)
- 2 tsp. ground cumin
- 2 tsp. ground coriander
- 2 tsp. black mustard seeds ( ground)
- 2 tsp. yellow mustard seeds ( ground)
- 1 tsp. ground turmeric
- 1 chilli (long, optional, chopped finely)
- 4 cups vegetable stock
- 1 can chopped tomatoes
- 1 tsp. sea salt (and pepper to taste)
- 1 cup coconut milk (can add extra if desired)
- 2 sticks celery (chopped)
- 2 cups pumpkin (butternut squash, butternut, chopped)
- 4 kale leaves (+ stems, chopped)
- 2 Swiss chard (silverbeet leaves + stems, chopped)
