- 1 cup chickpeas (canned, drained)
- 1 celery rib (finely chopped)
- 1 carrot (grated)
- 1/4 green bell pepper (or red, finely chopped, optional)
- 3 green onions (finely chopped)
- 1 pickle (medium, finely chopped)
- 3 Tbsp. fresh dill (finely chopped)
- 1/2 Tbsp. lemon juice
- 4 Tbsp. vegan mayo (I use 4, or sub for hummus)
- 3 Tbsp. nutritional yeast (I use 3)
- 1/4 tsp. black salt
- black pepper (to taste)
- 2 slices gluten free bread (or of sprouted, whole grain)
- 1/2 cup lentil (+ chickpea salad)
- 2 leaves lettuce (butter, romaine, spinach, or iceberg)
