The other day I was the grocery store and I decided to pick up some dry beans. I purchased red beans, lentils and split peas. You saw my recipe for red beans last week, but this week I decided to make lentils. I googled different things to make with them and settled on lentil tacos…
I was a little skeptical about this recipe, but they actually turned out really great! They were scrumptious, filling and quite delicious. Plus, they didn’t take very long to cook and were super cheap too!
This recipe make A LOT of lentils. This is good. You can eat as many tacos as you would like, and then have enough to make some lentil soup (coming soon).

- 2 cups dry lentils
- 2 cups chicken broth
- 1 taco seasoning (pouch, or you can make your own!)
- 1 yellow onion (small, chopped)
- 2 cloves garlic (minced)
- 1 sweet potato (small, cubed)
- salt
- olive oil
- 1 avocado (for the guacamole)
- 1/2 tomato (for the guacamole)
- 1 Tbsp. lemon juice (for the guacamole)
- pepper
- red pepper flakes (for the guacamole)
- 1/4 seasoning (pouch of guacamole, optional, for the guacamole)
- cilantro (for the guacamole)

Directions
- In a large soup pot, bring 2 cups of chicken or vegetable stock to a boil. Once your water is boiling, add in your lentils and reduce heat to low. Cover and simmer for 30 to 35 minutes.
- 2. In the meantime, chop your onion, sweet potato and garlic. Add to a sautee pan that has been heating with olive oil over medium heat. Sautee over medium for a couple of minutes, then turn the heat down to medium low.
- 3. Prepare your guacamole. Smash your avocado, add in your tomato and seasonings, and add in your cilantro. Set aside.
- 4. Check your lentils, they should be tender. Drain and add to your sweet potato and onion mixture. Add into your taco seasoning. Sautee for a few minutes.
- Sautee for a few minutes. 5. Place your favorite tortillas in the oven to toast up for a little bit. Now you're ready to serve. Top your lentils with some guacamole and some cilantro. Enjoy the goodness!
