- 3 red bell peppers (large, really, only one need be red. The other can be any color you like)
- 1 handful cherry tomatoes
- 2 cups cooked rice (or 4-grain pilaf, or rice blend, leftovers do splendidly)
- 1/2 dried lentils (a cup, any variety except red, though my favorites are beluga and french du puy lentils, picked through and washed)
- water

- 1/2 tsp. ground cumin
- 1/4 tsp. paprika (curry powder, and/or cayenne)
- salt
- pepper
- 1 Tbsp. olive oil
- 2 Tbsp. tomato paste
- 1 leek (small, white and tender green parts only or onion, chopped)
- cloves garlic (Several, minced)
- 1 leaf kale (or about two handfuls of arugula, washed and torn or chopped into bite-sized pieces)
- 1 oz. feta cheese (crumbled, optional)
- fresh herbs (your choosing, such as rosemary or thyme, minced, optional)
- 1 chunk avocado (optional)

2nd time: Super yummy - used a lime rice blend made from veggies and combined that with everything - but, sauteed the onion and garlic first. Used spinach, again, and used an entire leek this time. YUM!
1st time: Would definitely make these again.. I made a blend of lentil/quinoa with broth, subbed sweet onion with extra garlic for the leek, subbed spinach for the kale, added dried thyme and fresh rosemary. Def added more cheese than was called for. Also, roasted the halves face-down at 400F for 25 min before stuffing and cooking them.
