Description
A friend gave me this recipe in 1981 - it goes well with the delicious Winter Salad recipe
Ingredients
US|METRIC
4 SERVINGS
- 2 tbsp oil
- 1 carrot, diced
- 2 leeks, thinly sliced
- 1 onion, diced
- 2 sticks of celery, thinly sliced
- 1 x 400g can of chopped tomatoes
- vegetable stock
- 8oz red lentils
- seasoning (black pepper, sea salt, finely chopped teaspoon of chilli if required)

Directions
- Mix all the ingredients well together and cook in a slow cooker for 6 hours. Stir occasionally while cooking. Serve with Winter Salad and crusty bread.
