- 4 sausage casings (large links of sweet Italian, removed, I used half of this, preferring the sausage to not dominate the soup’s flavor [update] and from the comments, it sounds like most of you preferred it with just 2 links as well)
- 1 onion (medium, diced)
- 2 celery stalks (sliced or diced)
- 2 medium carrots (peeled and sliced into half-moons or diced)
- 4 cloves garlic (sliced, reserve half for later in recipe)
- kosher salt
- 1 pinch crushed red pepper flakes (optional)
- 1 cup brown lentils (sorted and rinsed)
- 2 bay leaves
- 28 oz. crushed tomatoes
- 6 cups water
- freshly ground black pepper
- 4 cups leaves (shredded or thinly ribboned Swiss chard, or kale)
- Pecorino Romano cheese (Grated, to finish)

This was a great recipe...used Kale instead of Chard,also used fresh tomato.

Easy to make and I used spare ribs instead of sausage and was still delicious. I esp. like the finishing touch of garlic fried in olive oil. You could add a poached egg and add on top as well.

Very tasty. I added a bit more garlic and some worschtechire to make it a bit more flavorful. I would recommend this recipe!

Excellent! Very flavorful and simple to put together. I used all 4 sausage links and felt the flavor was not too strong and I substituted spinach for chard, which was excellent.
