- 1 Tbsp. olive oil
- 2 large carrots (chopped, approx. 1 cup)
- 2 stalks celery (chopped, approx. 1 cup)
- 1 medium onion (chopped, approx. 1 cup)
- 2 bay leaves
- 2 sprigs fresh thyme
- 2 garlic cloves (minced)
- 1/2 tsp. kosher salt
- 1/2 tsp. black pepper
- 1 pinch crushed red pepper
- 8 cups chicken stock (or veggie broth)
- 1 cup dried lentils (rinsed)
- 16 oz. turkey kielbasa (sliced)
- 1 Tbsp. olive oil (in a dutch oven or stockpot, add in the diced veggies and let cook until the vegetables are softened a bit, about 5 minutes)
