Ingredients

- 1 1/2 cups green lentils (washed, drained)
- 1/2 cup red lentils (washed drained)
- 9 cups cold water (or vegetable broth)
- 1 onion (medium, finely chopped)
- 3 celery sticks (finely chopped)
- 3 medium potatoes (peeled, cubed into 1” size cubes)
- 2 garlic cloves (minced)
- 1 green chili pepper (fresh, or 2 jalapeños)
- 3 Tbsp. olive oil
- 1 Tbsp. red pepper (paste, I have a YouTube tutorial for this paste)
- 4 Tbsp. salsa (lecho, you can substitute lecho with, tomato sauce, 1 fresh or canned tomatoes, watch lecho tutorial on my YouTube channel)
- 1/2 tsp. ground black pepper
- 1/3 tsp. ground turmeric
- 1/2 tsp. red chili flakes (leave it out if you don’t like spicy)
- 1 tsp. ground coriander
- 2 tsp. dried herbs (: such as basil, dill, thyme, optional)
- cilantro
- fresh herbs
- dill
- parsley
- salt (to taste)
