- 2 tsp. olive oil
- 1/2 medium onion
- 1/2 cup diced yellow onion
- 1 cup shredded carrots
- 2 cloves garlic (minced, about 2 teaspoons)
- 1/2 cup old-fashioned rolled oats (or quick-cooking oats, do not use instant or steel cut)
- 1/4 cup Italian parsley (chopped fresh)
- 1 1/2 Tbsp. tomato paste
- 1 tsp. dried oregano
- 1/2 tsp. kosher salt
- 1/4 tsp. black pepper
- 1 large egg
- zucchini noodles (Prepared whole wheat pasta noodles, or sweet potato noodles)

I added seasoned breadcrumbs, and shredded mozzarella with mine. We all loved it including my 3 kids ages 7, 5, and 2. We had a bunch of lentils so I wanted to get creative and found this recipe. My son said he liked it better than actual meatballs. They really look like meatballs and the texture is really great. its pretty hard to tell that its not actual meatballs. Great recipe!
