So this is a fun little dish :-)
I made a small twist, I prefer my tomatoes cold, so I just sautéed the onion and the spinach, only adding the tomato in at the end. I also put the whole thing in the fridge for about 15-20 minutes. It tastes great slightly chilled.
Since I have anemia, this is a great dish to up my iron :-)
