I finally made these Lemonhead cookies and may I just say....OH MY GOODNESS!! They are the absolute bomb!! I don't know which I like better, the chewy bits of candy throughout each cookie or the wonderfully tart-sweet glaze on top?? I used fresh squeezed lemon juice instead of water or milk for the glaze and this really punched up the lemon flavor. I don't own a stand mixer, only a hand mixer, so it was no easy feat but the finished product was soooo worth the extra effort. The 2 tablespoon scoop was a bit too large for my family, so I reduced it to 1 tablespoon before rolling it into balls. We found this size to be more manageable. Thank you for the awesome recipe, I will definitely be making these again!
